sweet potato fritters
prep time: 15 minutes
makes: 8
grocery list:
1 large sweet potato
1 can cannellini beans, rinsed and drained
¼ - ½ cup corn meal
2 green onions, sliced
1 small jalapeno, minced
1 handful cilantro, chopped
½ tsp garlic powder
½ tsp mexican seasoning
8 - 10 dashes hot sauce, cholula or texas pete work well
½ tsp tamari
6 - 8 drops stevia
sea salt
gluten free bread crumbs
coconut oil
- bake sweet potato in oven for 40-50 minutes at 400 degrees. remove and let cool
- mash sweet potato + beans
- add in cornmeal + remaining seasonings + mix well. adjust seasonings to taste
- form mixture into patties and dredge in bread crumbs
- heat 1 tbsp coconut oil in a pan over medium heat + drop patties into heated pan. add more coconut oil as necessary as fritters absorb a lot
- cook until browned on each both sides (about 4 mins each side)
- remove + allow to cool for a few minutes. serve
